My boyfriend found this website for me just today. He bought me a cast iron cooking set for Christmas and really wanted to get me jump started on my creations. We both love research, he just beat me to it!

Hello everyone.  I am from Beaver County PA, just north of the Pittsburgh area.  I only just found this site from a bread video I happened upon.  I have been cooking most of my life (started at 6!), But I just got back into baking bread and I am now re-addicted.  Things have changed dramatically though and I have found a lot of new info about techniques.  I can honestly say that the Stella video about Bakers Ratios has helped me more than any other video or book (I now own 6 bread books and most are semi worthless for getting "why" questions answered).  I am hoping that I can get some why a

MadMadamM here, just joined, as the result of a search to review some information on Mother Sauces. Thank you for your concept, as this is also how I like to teach, cook, and share. It really started when I was looking for some information on youtube about dry aging beef. That's where I found the video series on butchery from Jacob Burton. After devouring that series, I found the Stella Culinary website and this fantastic resource. Thanks Chef for sharing your knowledge with someone who now considers themselves as someone who cooks with passion, while attempting to use your professional techniques.

As you have guest I'm Canadian hailing from the Greater Ottawa Area, your videos and Ipod lectures will be a great help to me and my somewhat questionable culinary skills, looking forward to trying out your recipes and I am sure I can adapt them for the wild game and edibles in my area.
