I have been cooking a few years, ran a restaurant a bit so I call myself a chef
My current goal Revive traditional native American dishes and elevate them to top level cooking (a hard goal indeed)
currently I prep/cook in an employee dining room in a quite well known place I'm sure many of you have visited. it's seasonal and in my off time a cater a few events to keep my skills sharp, but it's not a real business and hope it never becomes one.
I hope i don't get to crazy in my culinary uneducated ways

So much to learn

Forum topic

Hey all,
My name is Kevin and I am a 56 year old that wants to take my nominal cooking skills to a higher level.
I have been in the Aviation industry for the last 34 years but prior to that was in the (what we called then) Food Industry.
I was on the food purchasing side for a five star hotel so I got to learn a lot about quality and cost but more important I learned how food should taste.

Hello from the UK

Hello,
I'm an amateur cook living in Scotland, and have recently re-discovered Stella Culinary.  I originally stumbled on it when there was just a blog and a podcast.  I love the fact the Stella Culinary provides real insight into cooking technique rather than simply providing a catalog of recipes.  I'm not very accomplished but I do love cooking.

Bob in Seattle

Forum topic

My name is Bob MacDonald and I'm a chef in Seattle, Washington. I currently work at a local senior center serving lunch to about 40 seniors 5 days a week. I started cooking professionally about 2 years ago after a 20 year break and I'm really enjoying it. I am allowed great freedom to create menus, buy food, prepare and serve it as I see fit, with few requirements.
I've been using Stella's website for a few months and the videos are so well done that I couldn't pass up becoming a member. Looking forward to learning much more.

Hi. I'm John from Guernsey C.I. , so am on London time. I love to try different techniques. I have been using sous vide for some months and love it. I tried some molecular cookery but was not happy with the results. My aim is to produce daily meals which are that bit above general day to day fare.
Please excuse any confusions I might make due to the inconsistencies between our 'common language' in cooking terminology!

Hi There.

Hi everyone. I am Samantha, (aka Phoenyx) and I am from South Africa. I am online a lot, working for different companies in two different countries and am a certified A+ PC Tech. I've always loved to cook, but wanted to know more than what my mom taught me. But there aren't any culinary schools around the area I live in. (Well no good ones). I am also a Digital Artist and a hobby gardener (herbs only, so far :D)
Anyhow, have a good one and hope to chat to you soon.

Phoenyx.
