Hello Chef Burton and fellow Stella students:

   Here are the first images of my homework. The first is the knife cuts in carrots. Large batonnete with large dice, medium batonnete with medium dice, batonnete with small dice. On the bottom of the image is Julienne with brunoise and fine julienne with fine brunoise.

Next I sliced a cantaloupe and arranged it in a plate.

Charity Dinner

This Saturday (1-11) we're hosting a charity dinner for 8 at my home.  It was auctioned off at a fundraiser for Cincinnati Children's Hospital.  The diners supply the appetite, I supply the food and wine.  The winning bidders are going to be treated to a dinner cooked by yours truly with help from a fellow home chef and a former professional chef - we can't wait!  Here's our menu and I'm open to any and all suggestions or comments:

-Trio of fresh hummus - a roasted red pepper, white cannelloni bean, and basil served with grilled bread and vegetable crudite.  Wine and Cocktails.

I got a chance to try my hand at making polenta tonight. First time I've ever eaten it too. I followed the directions from the podcast--4 cups water to 1 cup polenta, cooked for 25 minutes, which was a few minutes too many because it was just starting to stick to the bottom of the pan, but luckily didn't burn. I finished it off with butter and cream, some lightly sauteed shallots and basil chiffonade. I also drizzled some of the pan reduction sauce I made from my veal stock & red wine around it for a little extra yumminess.

Stock Homework - Lamb Stock Pressure Cooker

In the past I have made a really great chicken stock in my pressure cooker/canner. 

This was done using the following approach:

In the pressure canner I would place the following:

4lb Whole Chicken
4-5 Cups of water
1 tsp of salt
1/4 tsp of ground pepper
1/4 cup of diced carrot
1/3 cup of diced celery with leaves
1/3 cup of onion
1 tsp of thyme
1 tsp of parsley
1/4 tsp of oregano
1 garlic clove diced

Pressure Cooked Chicken Stock Experiment

Ok so here are the results of my experiment last night:
 
I ended up with around 2.5 gallons of chicken stock at single strength.  I also decided to can most of it in jars so it is shelf stable.  This way I can just store it on the shelf in the basement instead of taking up lots of room in the freezer.

I wanted to try making a good strong beef broth in my pressure cooker.
 
After doing some research and blending some techniques and recipes I came up with the following method.
 
The recipe was as follows:
 
2164g Beef Shank Soup Bones with Meat
1262g Beef Neck Bones with Meat
Olive Oil
 
Coat meat with olive oil.  Roast in ½ - 3” pan in the oven at 435F for 60 minutes, turning every 10-15 minutes.
