Hello Chef Burton and fellow stella culinary readers;
I made my second homework this time for the stocks section. I prepared a roasted chicken stock. I wanted a clear stock, but mine was not. So I reduced it, and kept skimming it until it was a quarter of it's original. After that I used a clean cloth to strain it from any solids. It looked a little better after that.
My idea was to make Japanese ramen noodles. So in my mind the clear stock was very important. So I made another stock with the aromatics I wanted to have in the soup. Fresh ginger, garlic, soy sauce, and jalapeno peppers.
I also had a 24 hour chicken in a 2% brine with garlic, soy sauce, ginger, a bit of lime and a bit of sugar. I patted dried the chicken and then I cooked it in the oven until the skin was nice and golden. Then I prepared a sauce with the drippings and my stock. To which I added sugar and lime juice. I thickened this sauce, and then I smeared my chicken with it and put it back in the oven for a sticky top.
I was curious as to how would my chicken brine would tasted if I boiled it and strained it. So I did, and a very clear broth came from that. I tasted it and it was a bit salty of course, but it had a nice flavor, so i mixed it with my other two stocks, boiled it again, skimmed some more and strained it through a gauze cloth to take away any solid left behind.
I already had my homemade noodles ready, so I cooked them in salted water for 2 1/2 minutes, then strained them and put them in my serving plate. Added the stock then added my sliced chicken, sauteed mushooms and blanched spinach. Topped that with finely chopped green onions, and a drop of my chicken sauce. It was delicious! very flavorful stock, wonderful texture on the noodles and the chicken was very tasty and juicy. All the process took 28 hours! We liked it a lot, so I was worth it.
Sorry I could not get a better picture for the final dish, but I was kind of in a hurry to eat it nice and hot :D
I also took a pic of my noodles coming out of the pasta machine, they were so pretty!
