What is the best way of chopping them to get a consistent size? Knife skills or equipment?

They went over what they thought was the best manual nut chopper, but not how to best process nuts on a larger scale.
Would it be best to use a food processor, blender or some other device... then filter to separate bits too large and small?
Maybe it would be a combination of equipment and combination of techniques to process nuts more efficiently.
Please no links to infomercial websites you found by watching TV at 3 AM in the morning... :)
