Official Welcome From Jacob

What a wild couple of days. I want to officially welcome all new members of the Stella Culinary School Community (SCS baby!). This site has been a long time in the making, and it felt so great to push the launch button Sunday night, even though my excitement was quickly deflated by numerous bugs.

Well, thanks to my superstar programmer Dong, most of the major bugs are fixed, and now all that's left is some fine tuning and tweaking...and lots of new content!

Before we go any further, let me be clear: this site is a collective, a community. It will be nothing without you, the community member. I've been lucky enough to learn the importance of a strong community on the Free Culinary School project. The community members were the site's back-bone, and I'm happy to welcome them to their new home, which make no mistake, they helped create. A special shout-out to Wisonsin Limey, Zalbar, mommycook, labradors, starkman, smurfe, unity451, revalator, clbpdx, pzzldmom, cuocoitaliano, just to name a few.

And I look forward to welcoming new people into the community as we move forward.

One quick note about the podcasts.

Stella Culinary School will be our flagship audio podcast and will be taking the place of The Free Culinary School Podcast (FCS). All the episodes are the same, but I went back and re-recorded the old FCS podcasts, adding some new, updated information. Most of that updated info was spawned by commonly asked questions on the forum, so if you've been a long time memeber of the FCS community, you probably don't need to re-listen to these podcasts unless you need a quick refresher.

I stopped at SCS 17| Canapes, because I wanted to re-record the bread series after Stella Culinary was launched. Bread has really become a passion of mine over the last two years, and I've learned so much after recording the FCS bread series, that I wanted to start fresh. Also, the first episode in the FCS bread series was sourdough, which was pretty much the equivilant of throughing the listeners in the deep end of the pool.

My goal is to have a lot more video content as well; some of it is already posted, but hasn't been organized into index pages yet, except Knife Skills - HD. The other video content will be organized in the next few days. These videos series will be:

Sauces And Soups (SNS), House Cured Charcuterie (HCC), Cooking Techniques (CT), and Kitchen Prep (KP).

More information to come in the following days.
