Greetings from Smithfield Virginia, the Ham capital of the world. I guess we came up with the peanut feed salt cured ham around 1779 or so. We have the worlds oldest hame in the county museum.

Smithfield is a coastal town near the mouth of the Chesapeake Bay but really located on the James River and Pagan River which runs through the town. Established in about 1634.
Lots of good food from the Bay with Oysters and Blue Crabs, good produce from local farms with sandy costal plain soils. I really want to concentrate on using more local seasonal stuff in my culinary experiments this year. I'm glad I found the site, it has some awesome videos and info. Thanks chef Jacob.
