Found these Vulcan VCE4 Electric convection ovens on craigs list. I had to convert them from 3 phase 208V to single phase 240V which required disconnecting the two middle elements out of 6 total. It stills draws about 14 KW which is all the power that is left in our building. During a recent test cook I had potato wedges on the top pan, middle pan, and bottom. The top pan was cooking and browiing alot faster. I'm wondering if all convection ovens have a little heat imbalance or is it the lack of using all 6 elements. The Vulcan has 6, 2kw elements total with 3 on each side of the oven. I had to disconnect the middle elements due to power constraints.
