I was hoping someone could help me figure out a question I've been having for a while now. I'm currently a culinary student but previous to this I spent some time working the line, and was allowed to cause untold stress and headshaking for my boss on the saute station towards the end. We had these awesome black pans that I really enjoyed cooking with--we designated them strictly for protein cooking but they were super versatile. They reminded me of cast iron in that they were black and heavy but my chef de cuisine didn't know what they were. My research has suggested that they could be black steel. More importantly, where can I get them?
