There is a fish called Bonita which I recall being a mild flavored tuna type of fish. Well, I saw a fish at my favorite shop called a Bonito. The man behind the counter did not speak English well, so I told him that I wanted the whole fish (about 4 lbs.). I asked him to filet it, and that I wanted to keep the frame and head.
Because the meat was dark, I made a stock on an outside burner. Good thing because man, is it strong. The Food Bible would say that the food volume is loud.....well, this amp goes to 11! My husband grilled the fish which I marinated in lemon with a little Worcestershire. It was okay. I'd like to know if any of you know what is typically done with Bonito. The dog loves it!
