I am finally stepping out of my comfort zone and trying my hand at catering. I have a wedding booked and I was going to grill turkey sliders. Please let me know if my math is correct, 1lb = 16oz meat, sliders are usually 2oz patties. I should be able to get 8 sliders per every one pound of meat correct. The guest count is roughly 200 guest. I am doing a buffet style with the full menu being:
Cowboy Caviar and homemade tortillia chips
Garden fresh bruschetta
Bacon wrapped smoked cocktail sausages
Grilled turkey sliders
Chilled strawberry soup shooters
Deconstructed lemon tart.
I want to make sure I am doing my math right for portion control and food cost. I was thinking about 20 - 25 pounds of ground turkey which should yield between 160 - 200 sliders. Does this sound correct and would not turn away any comments or suggestions on my menu. The wedding is at a barn with a very rustic feel, the date is 08 Aug. I want to than k you ahead of time for your help, and know how much stella has helped me improve in my culinary dream, such a blessing.
