Sorry all, it has been a long time that I have been on this site and actually had to re-create my username.
I am trying to make a gluton free chocolate fettuccine with some type of reduced strawberry and ????? (non alcoholic - work related) toping. The allergies having to stay away from are tree nuts, gluton, diary and raw eggs. 1. I have found a glutton free flour blend (namaste - Sweet brown rice flour, tapioca flour, arrowroot flour,
sorghum flour and xanthan gum ), what type of flour modifications, if any, will I need to do or do you believe it will transfer straight measurement for measurement straight across in place of flour? 2. I have never made fettuccine without eggs before in the recipe, I have heard of eggless but never tried it... is there a good recipe for eggless fettuccine. 3rd and final question, I would like to do a take off of fettuccine with alfredo, but the diary limitations have made me re-think toping concept to a reduced strawberry or cherry in a simple syrup, but it feels lacking.. open to ideas for a toping knowing the limitations.
