Strawberry Turn Overs

Here is a great recipe I like to use.  It is for making Fine Puff Paste Turn Overs.
 
You will need to make the Fine Puff Paste from the earlier post I have made.  A full batch of Puff Paste Will make about 18 turnovers at about 4" size and about 12 at the 6-7" size.
 
It is important that you refrigerate the Fine Puff Paste for an hour or two per the directions for making the Puff Paste before you start this recipe.
 
Here is what you will need:
 
1 Batch of Fine Puff Paste (see earlier post for this recipe)
8 oz of Fresh Fruit (I used strawberrys for this recipe, you make also use any jam or jelly)
3 egg whites well beaten
Sugar
 
Start with you refrigerated Fine Puff Paste

 
Roll out the Fine Puff Paste into a large thin sheet about 1/8 inch thick or a little thinner

 
 
Cut into the shapes you want, I like to use squares and fold them over to make a traditional triangle shaped turn over
 
Add Fruit and a spoon of sugar.  If you want to use Jam or Jelly omit the spoon of sugar.  If you want to boil the fruit first with some sugar that is also acceptable.

 
 
Wet two of the outside edges with some of the egg white and fold the turn over.  Seal the edge by pressing down with a fork.

 

 
Cut a small slit into the top to vent the steam during baking.  Brush the top with Egg white and sprinkle with pleanty of surgar.

 
Bake in a preheated oven at 375-400 F for about 20-25 minutes depending upon size and how golden brown you like them.  I did mine for about 22-23 minutes.
