My sister recently gave this recipe to me and I have to say it's just amazing. A great vegetarian appy, great for the beach or a party. If you didn't know the ingredients, you may be fooled into thinking that you were in fact eating shrimp cocktail (eyes closed of course).
Poor Man's Shrimp Cocktail
1 head of cauliflower cut into bite sized pieces.
Bring to a rolling boil:
3 quarts of water, along with
1 onion, quartered
1 lemon, quartered and juiced
3 cloves of garlic, smashed
1/8 cup of kosher salt
1/2 cup of Old Bay or your favorite crab boil
Boil this for 10 minutes, then remove the onion, lemon and garlic. Add the cauliflower and return to a boil. Turn off the heat, cover tightly and let this sit off heat for 5 minutes.
Drain and cool on a sheet pan, refrigerate, and serve with your favorite cocktail sauce.
