Hi everyone.
So at the kitchen store i work at we sell the Kyrocera brand of ceramic knives. As i try to be highly informed so that i can help customers find the right knives for their needs and situation, i like to know all i can about every knife we offer. But the chef at my store and i were talking and we both realized we had know idea what angle the edge is on the Kyrocera ceramic knives. After spending a decent about of time digging around on websites, I still have not found this information out. does anyone have any idea as to what the edge angle is on this line of knives or where I could find the information out? I would imagine it is aroudn the 10-15 degree angle as ceramic has a thinner edge than steel knives, but that is just a shot in the dark.
Any thoughts?
