The results of my dessert dish

Well based on my dessert that I wanted to try, I finally did it and created the monster. Presentation wise, 4/10 - or even lower. Taste wise - I would give it a 6-7/10.

I made the base a gingerbread and managed to bake it quite well. The taste of the ginger was not overpowering and had a subtle taste that did not over power the rest of the dish. I'm very happy with how that tasted. The bad news is that I didn't crumble it before adding the other layers and thus it went rock hard in the fridge, so cutting a slice required a hammer and chisel. Once cut, it did have a nice crunch to it. Since it didn't match the crumbly texture I had in mind - I will do better next time.

The caramel - I wussed out and went with the sugar/condensed milk option. It wasn't the dark brown colour you would expect but I was a bit nervous about burning it so I didn't go all the way. However, I did add the salted peanuts. I did it two ways, I added really fine chopped nuts so you had the taste go throughout the caramel. I then had larger chunks to give you that salted crunch.

The chocolate at the top was yummy, I did a 1:1 ratio of cream and chocolate. I used Lindt chocolate so it had a nice creamy and silky texture to it. All in all, I'm pleased with the dish in that it was not too overpowering. You only needed a small touch as too much was a bit sweet (but that's just to being a pig). With the ice cream, it did work. So while it wasn't your OMG, I'm in heaven dish it was good and family did love it.

Again, presentation does need work.

This weekend, I'm working with chorizo, so I'll be working on making this http://www.masterchef.com.au/bomba.htm. Unless you guys can come up with another interesting use for chorizo. I like how it creates its own oils that can be used to flavour/influence. I have to say that I like the idea of creating flavours that will excite the palatte. The podcast where Chef Jacob explains the concept of balancing flavours really spoke to me.
