I am not too sure what you would call this - but it was a very spicy and tasty vegetarian dish - well my kind of spicy and vegetarian. lol
I think I might call it Spicy Mash.
* 1 teaspoon of red chilli flakes
* 1 teaspoon of black mustard seeds
* 4 cloves of fresh garlic
* 1 teaspoon of ground coriander
* 1 teaspoon of tumeric
* 1 teaspoon of ground cumin
* 1 teaspoon of ground ginger
* Salt and Pepper to taste
In the oven wrap in foil and bake for 1.5 hours at 220 degrees c
* 1 small butternut pumpkin
* 1 eggplant
* 1 red bell pepper
Then add to the frying pan
Serve on a bed of rice with yoghurt and maybe a flat bread.
Very tasty and oh - did I say hot?
