No knead sandwich bread

I'm just going to post this here since no one else seems to be using the other forums. A while back I mentioned my desire to try and convert the noknead philosophy into a sandwich loaf. I've been trying and coming up with some delicious results, but they all have the same common problem. The no knead sandwich bread tends to have a little bit looser a of a crumb even when it's mixed fairly well and handled more than no need typically should be, it still comes out a little loose, and falls apart from the cut. The particular recipe that I'm trying was actually not a very long rise time which is strange. It was the no knead wheat bread from the king Arthur website. It only had about a three hour rise time. If any other aficionados cares to chime in, I'm all ears. I'm getting really good at experimenting and I feel like I'm on to something. I want to try and get something consistent so I can teach my wife and we can both make it and have bread whenever. Done buying the store loaves!

I'm also getting to think that no need may not be the way to go for the sandwich bread although it makes delicious breads of every other type. Not that I mind, it was just experimentation
