Part I 

I have a familyt member who is not well.    I have offered to take my Chef Jacob's Roasted Chicken Stock around which I have canned due to them not having any room in their freezer - and I really wanted to see my family member, so thought, "I will come around and cook dinner".   

 

I am thinking of doing individual tinfoil parcels.   Chinese cabbage lines the tinfoil, the fish gets placed on top, with a cherry tomato and also a piece of lemon, season with salt & pepper, and more chinese cabbage on top wrap up the tinfoil and put in the oven.  When I cook it for one I will put it in the oven for 20 minutes on 150 degrees celsius.   Not sure how long it will take to do three, at the same time, but probably will take longer than just one.   

 

Any thoughts re the cooking time?

 

Part II  

I thought I would do a salad from my garden but without the garlic confit.    Lettuce, cherry tomatoes and a hard boiled egg.    *so I thought* 

 

Part III

What would you suggest re potatoes?   I am thinking that mashed pototoes would be rather plain, and I was thinking that I would like something to balance out the fish and the salad.   

 

I look forward to hearing from you when you have the time and the inclination - otherwise it will just have to be mashed potatoe and I'm thinking that there must be something really better!
