A really touchy subject that affects us all...

I've really been struggling with this lately...
Light cooking. That sheiße is hard to do well. My wife has a sub to Cooking Light, and I often don't hate the recipes in there. We don't eat terribly, we eat good food, but there are some things that I'm really not convinced can be subbed.

On NYE I cooked at a friends house, a little off the cuff thing I put together. I made homemade ricotta gnocchi (i like the texture and taste better than potato) and i did a pumpkin cream sauce. When we went to the grocery, i seriously stood in the dairy aisle for like two minutes with a heavy cream in one hand, and a light cream in the other. I opted for the light. Everyone really liked the sauce. I don't know if it was the thickness of the pumpkin (i'm sure it was), but the sauce was not light and watery and stuck to the gnocchi well. NOTE: this was NOT half and half, it was light cream.
 
What are some subs that work for everyone? I'm thinking I may be able to live with this light cream thing. I know that Jacob mentioned a looong time ago (maybe even FCS days) that he wanted to do some topics on cooking light. Love to hear from peeps.
