Hello everyone, and thanks for the resources you share here. After a month or so of lurking, it's time to stick my head up and say hi.
I am a home chef gently working my way out of some deep and comfy cooking ruts, and learning to cook food more like what I enjoy in restaurants. My first love was baking, from the time I was a girl and my sister and I tried to fake our way through a first loaf with only Joy of Cooking for a guide. Alas, we were in Santa Fe, and read the high altitude directions too late...
I'm currently a student at the Faulkner State's Gulf Coast Culinary Institute in Gulf Shores Alabama and I am so excited to have found this website! Thanks Chef, for taking the time to do this, to help others. I sat down and watched just about every video on here in one sitting!

I'm a little embarrassed to say that I've been watching from the sideline for quite a long while without contributing to the forum; however, I've finally made the effort to get into the game, and (hopefully) make a useful contribution.
I'm an Aussie, born and bred in the heart of Sydney, but now living a rural existence in Australia's most-southern state, Tasmania - a beautiful island-state affectionately known as the " Apple Isle".
Just wanted to introduce myself to the forum and say hi.
Finally getting around to this, and since I asked Jacob to change my screen name to something a bit more personal (and a bit less corny), I thought I'd throw something down here....
40-something pharmaceutical research scientist who is trying to apply his lab skills to cooking rather than organic chemistry. It's interesting the similarities between the professions of chemist and chef.
i found this site looking for videos on knife skills and WOW what a wonderful site this is couldnt wait to join and become a part of this great community.
i have always had a passion for food and cooking and am now looking to fulfill my dreams and move from cooking for family and friends to becoming a Chef .
So I have been looking for a site like this for a long time and finally stumbled upon this when I was searching for the proper way to cook a duck breast. Can't wait to start going through all the podcasts and videos. Hope to meet some great people on here.
