I used to think I had some idea on how to properly dice, section, etc... but after listening to the podcast and watching the videos I realized I had a lot to learn. I tried to be careful to keep my fingers in their proper placement and hold the knife correctly (had no idea how bad my grip was!). Caught onto that fairly quickly and got to work. I tried to make sure everything was square and the same size & length. Worked on my battonet, small dice, jullienne, brunoise, fine julienne, and fine brunoise. I definitely need to keep practicing so I can get more comfortable though.
The pineapple came out the way I hoped without any problems, but sectioning the pumelo was harder than I thought. I left a lot of the fruit still attached, so need to work on that some more as well. You can see in the picture that the sections are not the same size.
