What's your favorite thing to cook in the kitchen, or even just your favorite thing to do.
Personally, I'm tied between making stock, and building sauces.
I love making stock because the taste and quality of everything you make with that stock all revolves around how much sense, skill and care you pour into it, and skimming a stock is relaxing to me, gives me a perfect excuse to think.
Building sauces rivals it merely because you can literally...do...anything. You have so many different which ways to go with a sauce, whether you start with a classic mother sauce as your foundation, or just build a sauce without a roux or other thickening agent. There's literally no end to where you can go.
Simple and delicious. (Cheese sauce built out of a cream bechamel sauce, placed in your lasagna)
Complicate and taste bud tantalizing. (Artichoke and leek puree folded into a bernaise sauce over lemon and black pepper salmon)
or well built and solid. (Red wine and scallion sauce built with beef glace and over juicy steak)
I love it all.
