Couple dinners I whipped up this last week, but need ideas

Not sure what I am going to cook this week so open for suggestions. Especially since the 4th (big holiday here in USA) is right around the corner. For me it is hard to plan meals for one, and then try and make a different meals from left overs and also try to vary menu's from week to week. Some times a person just hits a wall on ideas.

First my version of a taco salad. I did take pictures. It is simple and easy. It's more of a taco salad than say nacho's cause it has all the makings (well in my opinion) of a taco plus a salad. First fried hamburger and mixed in modified store bought taco seasoning. Fried up some wedged cut corn tortillas (can use store bought tortilla chips, but I prefer home made). Made a bed of the chips for meat. Added shredded lettuce top of that, then shredded cheddar, a few olives, half a avocado, then salsa (herdez is my store bought preference) a couple serrano's on the side...chased with a cold one.

The next meal sorry no pictures was a Chuck SV for 30 hours @ 135, then cooled for 15min, then finished on weber kettle until it was 137. Part of it went for that nights dinner with baked potatoe, sauteed yellow neck squash, green salad.

With left over chuck made a chuck roast type dinner. Stew in it beef broth with potatoes, carrots, onion, celery. Fresh french bread.
