The Induction Stove

  As some of you know, my husband and I moved into a neighborhood where there is no available gas line.  The result is that I have to cook with electric.  Having done that in the past, I really didn't want to go back to it, so we purchased an induction stove.  The way that it works is that an electric current moves over a copper coil which creates a magnetic field.  This field does not heat up, instead  a pan containing some iron that comes into contact with the magnetic field is what heats.  You can turn on a cooktop zone and put your hand on it and nothing happens!  It's a great way to shock your friends and family ;)

    With the right pan,the plus is an immediate response.  I can bring a pot up to a boil very quickly, then down to a simmer in an instant.  In fact there is somewhat of a learning curve with this technology in that the "heat" is faster than the response to a gas stove and what you respond to is how your food is cooking, not the height of the flame.  On my range there are 23 power levels to choose from, but because it is digital, you don't see what that means until your food responds to the level that you have chosen.  

  One night I filled a 10 qt pot with water to make pasta.  I used "PB" (power boost), and the pot was at a rolling boil in about 21/2 minutes.
  I've never driven a Ferrari, but I feel like I've gone from a VW bug to a muscle car.
 In short (impossible at this point), I just love it!  I highly recommend it to all foodies who wish to do away with electric burners, and even to gas users. 

  There are caveats to this range however, one is the cost.  I chose the Electrolux  Induction range with a convection oven at around 3k.  There are less expensive models, but I found things about the others that I didn't care for. For example, the GE has 5 cooking zones, one being a warming zone, this really crams the space together.  The salesperson couldn't answer why there was a warming zone if power level 1 is so low that you can melt chocolate.  He said " It won't cook anything".  Also, not all pans contain iron so I had to replace some pans because they wouldn't heat up.  Still,  this may be the best stove that I've ever used.
