Side Dish??
Yo,

Once a week I take a day and make myself an awesome meal. It is a nice break from beans and rice that I have to eat all week. This week I'm going to do a duck breast sous vide with a peach (or maybe raspberry) reduction sauce. I am feeling confident with the cooking the duck, but i've never actually had duck. S,o I need some help with a side dish. Any ideas?

You might try something to do with rice so you have an excuse to use all the sauce on your plate :). I love taking rice and eating it with sauce left from the protein (assuming there is any).

It's spring time, so I would go with some seasonal, sauted vegetables. Pearl onions and fava beans with some baby potatoes or fingerling potatoes are a great combo.

Although it's not seasonal, apples are a great accompaniment as well. I'll roast some apple wedges over high heat (use granny smith), until they caramelize, through in a good amount of sugar, letting it get all melty and caramelized, add shelled walnuts and then deglaze with aged sherry vinegar. Essentially what you're doing is making roasted apples with an a la minute gastrique.

Right at the end, swirl in a small pat of butter, some fresh cracked black pepper, and wilt in a handful of arugula. Even though they're out season, granny smiths are available year round and it's a real easy preparation.

I'm with Jacob on this one and here is how I would make the potatoes.  Boil them whole when cooked remove from the heat.  When they are cool gently smash them, just to flatten them a bit.  While the duck is resting on your cutting board (covered with foil and towels to stay warm), empty the duck fat into a heavy bottomed fry pan, heat it up, and crisp up those smashed potatoes.  Ahhh, potato nirvana!!!!!!

Dang, so many good ideas. Thanks! I just wish our farmer's market was up and running, so I could get a hold of some good fresh veggies. I'll definitely do a potatoes with some of the duck. Then I'll see what veggies the grocery store has and go from there. I'm psyched to eat me some duck.

I love eating duck breast with halved sour plums fried on the side. It removes the greasiness. I thought confit, breast and pancakes are worth try after a starter and before a pudding.
