How to Debone a Chicken Leg and Thigh

This may be a dumb question but what kind of knife are you using in this video?

I'm using a Shun boning knife, but I actually prefer the classic Shun utility knife ... I just didn't grab it that day for whatever reason.

Any boning or utility knife will work though as long as it's sharp and it feels comforitable in your hand.
