Kirkland Cookware

Hey all, I'm wondering if anyone has any experience with the Kirkland (Costco) Stainless Steel Cookware set here. I'm seriously wanting to move to stainless and I love the feel of these but I'm not sure about the characteristics of cookware with a capsule bottom vs. those that are sold construction like Caphalon (which I know I like) and All Clad (which I cant afford) lol. 
 

My question is this.....Is there a significant difference between cookware with the capsule bottom that those without?  I see the Update International Chef Jacob uses is capsule bottom so I'm wondering how either Kirkland or Caphalon would compare to the Update.


I miss contributing here, I need to get on more often!

Well this question may have just become moot.  I just priced out a very complete set of Update....

That's a pretty screamin deal, and if they are good enough for Chef, they are certainly good enough for me!

 

I would like some input on the 5qt saute pan however.  It would be nice to have for braising when entertaining, but it's pretty large for a home kitchen.  Maybe go with 2 3qt Saute pans instead? Any thoughts?

Is five quarts really that overly big for home use when you consider that one MORE quart would make it a typical, home-use Dutch oven?

I think a lot depends on the shape of the pot (how wide the pot is in relation to the height).

 

For many dishes, the pot will not be filled up and the usefulness of the pot is determined by the width at the bottom, the construction and the heat source.

 

Gas can often be adjusted to more evenly heat the wider bottom of some pots. With electric burners (and yes, some are better than others), there is no adjustment. Actually that’s not totally true since you can get heat diffusers which can spread out the heat more evenly.

I'd go with the 5qt. You'd be surprised how much you start reaching for it, especially in the winter when you'll start doing braises again. Good to see you around the forums. You'll really love your Updates.

 

As a side note, I've never used the Kirkland Brand Cookware, but as a Costco member, I've always been surprised of the quality of the Kirkland branded items. Obviously they're just doing 3rd party labeling deals, but whoever chooses the items that they custom brand, does a good job.

I would buy a small saute pan of each and see which you like best.

 

I needed a small saute pan and thought I would give the Update brand a try over my heavy copper bottomed Revere wear. The price was definitely right, and it works quite well. The only complaint I have with the Update pan is it takes a lot of scrubbing to make it clean, compared to a Revere wear pan. I have to pull out a new Scotch brite every time I need to clean it. Older Scotch brites won't cut it. (Pun intended)

 

I will probably buy a Update stock pot, but for saute pans I will try another brand.

 

But then again, from your profile pic, it looks like you can crack walnuts bare handed so the extra work may not be an issue. ;-)

We use a little Ajax at Stella to get the pans clean. But I will concede, they're not the easiest to scrub shiny. But for the price, it makes sense if I'm going to have a dishwasher on payroll any ways.

Thaks all for the input.  I know the stainless will be harder to clean, but with a little soaking and the ability to use abrasives it shouldn't be too bad.  Honestly, I'm not planning on putting it on display, so it doesn't have to be perfect.

I'll report back after I place the order and start enjoying them.

I use Bar Keeper's Friend and Scotch Brite Dobi Pads for my stainless.  Works like a charm and much better than other abrasives.  No scratching, polishes the pan and cuts through stains from high heat.

I'm familiar with Bar Keepers Friend, but never used it.  What's the difference between is and using Comet or Ajax?

I suppose if I  looked at the chemical composition of each of them I might be able to come up with some reasonable explanation.  However, when I bought stainless pans at both Le Creuset and Calphalon outlets in ME, the sales people were emphatic about using Bar Keeper's Friend.  They could have easily suggested Ajax or Comet.

 

Now you have my curiosity up so I think I will do some research and get back to you.  All I can tell you right now is that I love the combination of BKF and Dobie pads.

OK Lance.  Research completed.

 

The key difference between BKF and Ajax/Comet is that BKF has oxalic acid and Ajax/Comet have bleach.  Oxalic acid is key in removing rust and metal corrosion and is used to do so in other applications.  Bleach, on the other hand has a tendency to promote rust.

Maybe it doesnt have great distribution on the West coast.  Out here, you can get Bar Keepers Friend in any supermarket and its in Home Depot as well.

BKF is also sold as Bon Ami.

 

It is not the bleach or oxalic acid that differentiates these from comet but rather the size and hardness of the particles used.  BKF & BA won't scratch polished steel whereas Ajax & Comet will.  There is, however, a new version of Comet that doesn't scratch but it is not as effective at minimizing scratches as BKF & BA and uses a cyanuric acid to disinfect..

 

BKF & BA use feldspar as the abrasive, the other two won't say what's in theirs.

 

The disinfectant used shouldn't affect the rust inhibiting properties of stainless steel, hopefully you are rinsing thoroughly!  Housewives didn't like having to don the yellow gloves to clean with comet so BKF & BA offered a gentler alternative.

One other thing of note. If you wash your wares as soon as you're done with them they clean off very easily while hot off the stove. Just don't distemper them by running them under cold water.

Zalbar, this brings up a question ive never gotten mt head around. What is the difference between cleaning while hot andrisking warping your cookware? I dont understand where that line is.

Hi Lance!  I am also a BKF user for exactly the same reasons as Elliot has stated.  It also does a great job on porcelain, so I use it on the basin sinks and stainless faucets too.  Another great clean up product is "Dawn Advanced Power".  The claim is an "overnight soak in 5 minutes", it's a dual enzyme formula.  The stuff is amazing!  It really works, and now I will never go another dishwashing liquid.

 

  About the 5qt.  Jacob is right, you should buy it.  I picked up an All Clad 5 qt saute in TJ Maxx for $45.00.  I use it more than I imagined I would.  As Jacob says it's perfect for braises, and on the stove top I use it for what I call "zone cooking".  The center of the pan is hot and cooler around the edges.  Great for a stir fry type thing.
