Smoked Indian Style Ribs

I've been developing an interest in finding ways to elevate my love of traditional Kansas City BBQ and add a gourmet twist.  I did my fist experiment last weekend and wanted to share. 

I was smoking baby back ribs for Memorial day so I figured it was the perfect time to buy an extra rack to experiment with.  I wanted to go with a canape for my guests and decided to incorporate Indian flavors.  I broke the ribs down individually, frenched them, wrapped the exposed bone in foil to avoid excessive discoloring, then seasoned with garm masala, a little tumeric and kosher salt.  I put them in my smoker long enough to give them a nice light smoke that wouldn't overwhelm the flavors (about an hour), then finished them off on my grill.  I served them with a nice sweet and spicy mango chutney. 

They were a hit with our guests and overall I think it was a successful experiment.  The combination of the cherry wood smoke with the Indian spices & chutney were fantastic together.  There will be more of this BBQ elevation in my future. :)
